Low Carb Zucchini Slice...serves 6


*Tbsp Butter

*Small Onion finely diced

*2 Large Zucchini coarsely grated and wrapped in paper towel

*1/2 Cup grated Cheddar Cheese

*1/2 Cup crumbled Feta

*1/2 Cup Almond Meal

*1 Teasp Baking Powder

*1 Teasp Salt,1/2 Teasp Pepper

*6 Eggs

*1/4 Cup Unsweetened Greek Yogurt

*Fresh herbs of choice

*100g Bacon/Smoked Salmon/ Shredded roast Chicken(optional)



  1. Preheat oven to 180C

  2. Place butter and onion in small saucepan and saute until onion is translucent.

  3. In a large bowl, add Zucchini,fresh herbs,onion,cheddar and half the feta, almond flour, baking powder, salt and pepper.Mix well.

  4. Add eggs, yogurt and extra protein if desired, mix well.

  5. Pour mixture into baking dish lined with baking paper, sprinkle remaining feta on top and bake for about 50mins until golden on top.

  6. Allow to cool for 15mins before slicing into portions.This is a great lunch-just add a green leaf salad.Freeze extra portions for later in the week!!
