LeanCo Detox Pumpkin Soup..serves 5

*About 1.5kg Japanese Pumpkin or Butternut Pumpkin (or a mix of both is tasty) Peeled and diced-this is the hard bit but a little tip from my vegan days; chop pumpkin in large pieces and microwave for a few minutes to soften skin and seeds.
*4 cups Vegetable stock or Bone broth
*Juice of 1/2 an Orange
*Zest of 1/2 an Orange
*1 teasp Tumeric
*1 teasp Pumpkin Spice or Nutmeg
*1 teasp Ginger
*Salt and Pepper to taste
Place diced vegetable and herbs into large pot and cover with stock, bring to boil stirring occasionally.Turn the heat down and simmer for 20mins or until pumpkin is soft and cooked through.
Use an immersion blender to puree until smooth.Add the Orange juice and Zest,adjust seasoning to your liking.
Pour soup into 5 individual containers and store in the fridge for the DETOX week.Serve hot with mixed fresh herbs.ENJOY!!
