Carrot Cake Pancake..one serve

This makes an awesome breakfast or brunch, just double the recipe if you have company!!



2 Eggs

50g(1/2 cup)grated Carrot

1 teaspoon unflavoured Gelatin

1/2 teaspoon Pumpkin Spice powder

1/2 teaspoon Sweetener (I use Natvia baking Blend)

Pinch Salt


1.Place all ingredients into a jug/high sided bowl and process with a hand-held blender or Nutribullet.

2.Pour into a small non-stick pan and cook on medium heat.

3.Once pancake rises and firms, flip to finish cooking the top.

4.Serve with plain Greek Yogurt and a few Berries.
